Sombra is our darkest blend and also organic, created for those who enjoy an intense cup that still remains sweet, smooth and composed. It is built on speciality coffees from Latin America, with beans from Chiapas, Mexico as the central component. These coffees are selected for their ability to retain flavour and structure at higher roast levels, giving Sombra its depth without harsh edges.
The Mexican share provides the core character, offering natural sweetness, solid body and enough density to hold up during darker roasting. It brings notes of caramel and chocolate that shape the blend from start to finish. A smaller contribution from other Latin American origins adds refinement and a touch of lift while keeping the focus firmly on richness and roast.
In the cup Sombra is velvety and full with roasted chocolate, dark caramel and a gentle smoky tone. Acidity stays very low and the bitterness remains controlled so the sweetness stays at the forefront. The finish is long and cocoa-driven with a steady weight.
