Our decaffeinated coffee is sourced from Colombia and processed in Germany, where we have found that the flavour is preserved more consistently than with other approaches. The goal is simple. We want a decaf that holds the sweetness, clarity and balance of a regular coffee, without the dryness or thinness that often comes with removing caffeine.

We buy small seasonal lots that have enough structure and sweetness to carry through decaffeination and roasting. These coffees tend to keep their shape even after processing, which allows us to roast to a balanced medium profile. This roast level brings out chocolate and gentle fruit notes while keeping the acidity soft and the finish smooth.

The aroma leans toward milk chocolate and warm biscuit. In the cup you can expect chocolate, sweet grain and a faint touch of red fruit and spice. The texture is silky with medium body, and the finish is calm and sweet with a hint of cinnamon. It is a steady, complete cup designed to taste like coffee first, not like a compromise.

Decaf is often treated as an afterthought, but we approach it with the same attention as any other coffee in our lineup. The components may shift with the harvest, but the intention remains the same. A clean, sweet and fully expressive coffee that simply happens to be without caffeine.
